Can someone point me to the docs on having hobbit server watch hobbit  
clients that have a dynamic IP's?

Assuming you are also using dynamic dns, just enter them as:

0.0.0.0	somehost.example.com	# dialup

I think all you need to do is set 0.0.0.0 for the IP of each host.  This should force Hobbit to do a lookup each time.

Make sure the ttl is short.  Dns is queryed each bbtest cycle.
