Has the menu changed to be rendered in something not iOS friendly ?

Kind of. It is the hover that isn't supported on iOS since no mouse. I think Henrik added something to the tips and tricks, but if I recall correctly (50/50), adding this javascript anchor tag to the etc/xymonmenu.cfg will work-around the issue:
